- Castello della Sala is the Antinori family’s estate in Umbria. The 2008 Cervaro della Sala flows from the glass with delicate layers of mineral-infused yellow fruit, smoke and flowers. The 2008 is a somewhat lithe, linear Cervaro della Sala, that is best enjoyed sooner rather than later. Cervaro della Sala is Chardonnay and Grechetto aged in French oak barrels. Anticipated maturity: 2010-2015.
